Fried Oysters

1 lb fresh, shucked oysters
2 cups all-purpose flour
1 cup corn flour
1 Tbsp paprika
1 Tbsp black pepper
1 Tbsp Kosher salt
1 Tbsp dry thyme
2 cups buttermilk

Soak oysters in buttermilk. In separate mixing bowl, mix flour, paprika, pepper, salt, and thyme. Coat oysters in flour mix. Drop in hot oil for 3 minutes, strain for 30 seconds, and serve with horseradish dipping sauce.

Horseradish Dipping Sauce

¾ cup mayonnaise
2 Tbsp ketchup
1 ½ Tbsp horseradish
Pinch paprika
Pinch salt
Pinch oregano
Pinch Cayenne pepper
Pinch black pepper

Mix all ingredients and serve.


Smoked Salmon and Tarragon Dip

8 oz cream cheese, at room temperature
½ cup sour cream
1 Tbsp fresh squeezed lemon juice
1 Tbsp minced tarragon
1 tsp prepared horseradish
¼ lb smoked salmon
Salt and pepper to taste

Mix softened cream cheese with hand mixer for 2 minutes. Add sour cream, lemon juice, tarragon, horseradish, and salt & pepper.  Add chopped smoked salmon and mix with a spatula until blended.  Refrigerate for one hour and serve with crackers or toast points.
